Creamy White Wine Pasta. I served this delicious creamy pasta with grilled garlic butter langoustines but the pasta is equally as delicious on its own. If you want to make the langoustines, simply stir 2 crushed garlic cloves, the zest of a lemon and a tablespoon of chopped parsley into 75g butter. Spread the flavoured butter on to the langoustines and grill for 3-5 minutes.

Ingredients:
- 2 shallots, finely chopped
- 4 cloves garlic, very finely chopped
- 50g butter
- Teaspoon plain flour
- 350ml white wine
- 250ml chicken stock
- 150ml double cream
- Salt and white pepper
- 200g pasta- I used penne
Method:
- Cook the pasta in lots of salted boiling water according to instructions, reducing the cooking time by two minutes.
- Melt the butter in a deep frying pan over a low- medium heat. Add the shallots and cook until completely soft but not coloured, about 4-5 minutes. Season with salt and a pinch of white pepper.
- Add the garlic and cook for one more minute.
- Add the teaspoon of flour and stir for a further minute before adding the wine. Reduce by half, add the chicken stock and simmer for a few minutes.
- Finally add the double cream and simmer for a couple of minutes. Taste and season with salt and white pepper if needed.
- Drain the pasta, retaining a cupful of the cooking water.
- Add the pasta to the sauce and cook for 1-2 more minutes until all combined. Add a little pasta water if needed.
- Serve the Creamy White Wine Pasta on its own, or alongside grilled langoustines.
