Garlic Prawn and Tomato Spaghetti

 

Garlic Prawn and Tomato Spaghetti. Prawns marinated in garlic and tossed through a homemade tomato sauce and spaghetti. Easy, quick and healthy dinner. For the Garlic Prawns, I used the Garlic Butter Seasoning from Angus and Oink – a delicious and versatile garlic and herb mix. I like to keep my tomato sauce simple, using only olive oil, chilli flakes, garlic and tinned tomatoes. The best quality ingredients make for the best sauce. Remember to always put the pasta into the sauce and not the other way round.

Recipe
Serves 4
Difficulty Level: Home Cook

Ingredients:
  • 350g raw king prawns
  • Heaped tablespoon of Garlic Butter Seasoning or 3 crushed garlic cloves mixed with a bunch of parsley, finely chopped and a tablespoon butter.
  • 200g dried spaghetti
  • 2 garlic cloves, finely chopped
  • Dried chilli flakes (as much or as little as you like)
  • 2 tins of plum tomatoes
  • Extra virgin olive oil
  • Salt and pepper
 
Method:
  1. First make the sauce. Heat a pan and add a splash of olive oil. Add the finely chopped garlic cloves and the dried chilli flakes. Cook on a medium heat for a minute. Add the tomatoes and simmer for 30 minutes. Season with plenty salt and black pepper.
  2. Toss the prawns in the Garlic Butter Seasoning and fry or grill until just cooked (they only take a few minutes)
  3. Boil the pasta in salted water until cooked through.
  4. Drain the pasta, retaining a cupful of the cooking water.
  5. Add the cooked pasta to the pan of sauce and loosen with a little of the pasta cooking water if needed.
  6. Add the cooked prawns and stir to mix.
  7. Serve the Garlic Prawn and Tomato Spaghetti with garlic bread and a spinach salad.
