Ham Egg and Chips

 

Ham Egg and Chips – My take on the classic dish. Gammon steak, creamy spinach, crispy egg and homemade chips. I am obsessed with crispy eggs after trying them out for the first time in my recipe for Crispy Egg with Proscuitto Asparagus. I was thinking up another dish to use them in. Bacon and eggs were an obvious flavour match followed by the fresh flavour of spinach and crunchy homemade chips to finish it off!

Recipe
Serves 2

Ingredients:
  • 3 eggs
  • Sourdough breadcrumbs (whizz a couple of slices in a food processor)
  • Plain flour
  • Sunflower oil, for frying
  • 2 gammon steaks
  • 5 balls of frozen spinach
  • Single cream
  • Salt and pepper
  • 3 large potatoes
Method
  1. Preheat the oven to 220C. Slice the potatoes into chunky chips. Heat 1cm of oil in a large baking dish and put in the oven to heat up for 5 minutes. Toss the chips in the hot oil and cook for 30 minutes.
  2. Boil 2 of the eggs for 5 minutes.
  3. Carefully peel the eggs. Put a couple tablespoons flour on one plate, a beaten egg in another and a large handful of breadcrumbs in the next.
  4. Coat the boiled eggs in flour, dip into the beaten egg and then into the breadcrumbs. Dip back into the egg and then the breadcrumbs for a double coating.
  5. Fill a saucepan around 3-4 inches high with sunflower oil and heat to 200C. Fry the eggs for 2 minutes on each side until crisp and golden. Drain on kitchen paper.
  6. Meanwhile, heat two large frying pans over a medium heat. Season the gammon steaks with pepper and fry for around 3 minutes on each side.
  7. For the spinach, cook in the microwave straight from frozen for a couple of minutes until soft. Squeeze out as much moisture as you can. Stir through around 100ml of single cream, salt and pepper and heat through.
  8. Serve the gammon steaks topped with the creamy spinach and crunchy homemade chips on the side! Enjoy my take on Ham Egg and Chips
