Salmon Burgers with Salsa Verde and Roasted Vegetables

 

Salmon Burgers with Salsa Verde and Roasted Vegetables. This super healthy dinner is still full of flavour. Juicy Salmon Burgers are served with a sauce of punchy, herby Salsa Verde and sweet roasted peppers, courgettes, red onion and tomatoes. It is also very easy and will be on your plate in 30 minutes

Ingredients:

For the Salmon Burgers :

  • 2 large skinless salmon filets
  • 2 spring onions, finely chopped
  • Salt and pepper

For the Salsa Verde:

  • Small packet each of parsley, mint and basil
  • 2 garlic cloves, peeled and crushed
    1 lemon, zest and juice
    1 tablespoon capers
    1 tablespoon Dijon mustard
    2 anchovy fillets from a jar or tin
    Olive oil

For the roasted vegetables

  • Mixture of veg such as red onion, peppers, courgette, aubergine, mushrooms, baby tomatoes all cut into large chunks
  • Garlic clove, crushed
  • Chilli flakes
  • Salt and pepper
  • Olive oil
  • Basil leaves, to serve
Method:
  1. Preheat the oven to 220C. Toss the vegetables with the crushed garlic, a pinch of chilli flakes, salt and pepper and a good glug of olive oil. Roast in the oven for 25-30 mins.

2. Meanwhile, make the Salmon Burgers. Place all the ingredients (season with salt and pepper) in a food processor and pulse lightly until you have a rough, chunky mixture. Use your hands to mould into two burger patties and place in the fridge to firm up for 10 minutes.

3. Make the salsa Verde by placing all ingredients apart from the olive oil. into a food processor (or use a hand blender) and whizz to a paste. I like mine quite smooth. Drizzle in a little olive oil, stir to combine and check the seasoning.

4. Put the salmon burgers in the oven for 5-7 minutes. Or you could fry them – simply drizzle a pan with a tiny bit of olive oil over a high heat and fry for 2-3 minutes on each side.

5. Serve the Salmon Burgers topped with the Salsa Verde and the Roasted Vegetables on top. Enjoy!
