Thyme and Orange Glazed Carrots. Save precious space in your oven when preparing a roast dinner by making my festive carrot recipe, cooked in a frying pan. My Thyme and Orange Glazed Carrots are buttery and  infused with orange juice and thyme. The most perfect addition to your Roast Dinner.

RECIPE

Serves 8
Difficulty level rookie

Ingredients:

  • 1kg carrots, cut into evenly sides batons. Or use baby carrots.
  • 60g butter
  • 200ml Orange juice
  • 1 tablespoon honey
  • Half a bunch of fresh thyme
  • Salt and pepper
Method
  1. Heat a large frying pan over a high heat heat. Add all the ingredients (a good grind of salt and pepper too) to the pan. Bring to the boil, then reduce the heat to a simmer. Simmer the carrots for 10-15 minutes until just soft and all liquid has evaporated.
  2. The carrots should be buttery, just beginning to colour and sprinkled with thyme leaves. Serve the Thyme and Orange Glazed Carrots as a side to your roast dinner!
