Maple Bacon Scones

 

Maple Bacon Scones- if you love bacon and maple syrup pancakes, these are the scones for you! I came across Moose Maple Butter over on Instagram and after discovering the nearest place to source in Scotland was over 100 miles away, I was kindly offered a sample to try. Fast forward a couple of weeks and Moose Maple Butter can now thankfully be found in Aberdeen- at Gourmet Cheese Co (An amazing artisan cheese shop).

Moose Maple Butter is delicious- delightfully moreish with the perfect balance of sweet and savoury. Simplicity is key and the butter is made with only three ingredients: Grade A Canadian Maple Syrup, British Butter and Sea salt. 

Moose Maple Butter will forever have a place in my fridge; the perfect match for crumpets or sourdough. Being a bacon and maple syrup lover though, I had to think of a recipe that included both the butter and bacon. These Maple Bacon Scones are easy to make and are best served warm from the oven, served with even more bacon and maple butter!

Maple Bacon Scones

 


Recipe
Makes 6 scones
Difficulty Level Rookie

Ingredients:
  • 250g self-raising flour
  • Teaspoon each of mustard powder and paprika 
  • 100g cheddar cheese (plus extra for sprinkling) 
  • 50g Moose Maple Butter (plus one tablespoon)
  • 180ml milk
  • 100g of bacon, finely chopped
  • Beaten egg, or a splash of milk, to glaze.

 

Method:
  1. Heat the oven to 220C. To a cold frying pan, add the chopped bacon. Put the heat on medium and cook slow for around 10 minutes to allow the fat to render out of the bacon. Once the fat is rendered, turn the heat up to high. Fry the bacon for 5-7 minutes longer until really crisp. Once crisp, stir through the tablespoon of Moose Maple Butter. 

2. Meanwhile, measure the flour into a large mixing bowl. Add the grated cheese, and stir with a knife to combine.  Melt the Moose Maple Butter and stir into the milk.

3. Once the bacon is cooked and crisp, stir into the flour using the knife. Now gradually pour the milk into the mixture, stirring with the knife gently to combine. Do not over mix or the scones will be tough.

4. Once combined, tip on to a floured surface and knead very briefly into a dough. Flatten gently with your hands to 3cm thick and cut out six circles with a round cutter. When lifting the cutter off, don’t twist.

5. Place the scones on a baking tray, brush with a little egg or milk and top with a little grated cheese. Bake for 20 minutes – resist the temptation to open the oven door until the end.

6. Remove and enjoy your Maple Bacon Scones warm with extra Moose Maple Butter and crispy bacon.
