Sesame Seared Tuna Steaks with Chimichurri Sauce

 

Sesame Tuna with Chimichurri Sauce – Sesame seed coated tuna steaks topped with Chimichurri sauce. Chimichurri sauce originates in Argentina. Pesto-like, it consists of herbs (usually parsley or coriander – I prefer coriander for its lemony vibes), chilli, garlic, oil and vinegar and goes perfectly with a tuna steak (or beef steak for that matter) This is one of the quickest dinners to make on my blog. It literally takes no longer than 5 minutes to get on your plate. The main reason for this is the tuna. Overcook the tuna and you will be welcomed with dry, inedible and bland flesh. All tuna steak needs is a quick sear for just 30 seconds on each side. Don’t be concerned about the raw look. The meaty but juicy texture of a seared tuna steak is unlike anything you can find in a tin.

Ingredients:

For the Tuna Steaks:

  • 2 sustainably sourced tuna steaks
  • Sesame oil
  • Black and white sesame seeds
  • Salt and pepper

For the Chimichurri Sauce:

  • 1 packet of coriander or parsley (or a mix of both)
  • 1 green chilli
  • Teaspoon dried oregano
  • 3-4 garlic cloves
  • Red wine vinegar
  • Chilli oil (or olive oil)
  • Salt and pepper
Method
  1. Place a griddle pan over a high heat.

2. Rub the tuna steaks with sesame oil and season with salt and black pepper. Place a couple tablespoons each of black and white sesame seeds on a plate. Press the tuna steaks into the seeds to cover.

3. Cook the tuna steaks for 45 seconds to one minute on each side (depending on the thickness) Allow to rest for one minute.

4. Place the herbs, garlic, chilli and a good glug of red wine vinegar and around 100ml oil in a food processor. Whizz to a paste. Taste and season with salt and black pepper. Add more oil or or vinegar depending on how sharp or runny you want it.

5. Slice the tuna into thin strips and top with the Chimichurri sauce.
