Chicken Satay Skewers with Peanut Sauce

 

Chicken Satay Skewers with Peanut Sauce – Charred Chicken, crisp and brown on the outside from the grill and soft and juicy inside from the marinade. Satay Chicken is popular all over South-East Asia – originating in Indonesia – and you will find (and smell) chicken skewers grilling over hot coals at every food market and most streets in cities all over Asia. The term ‘Satay’ refers to the Chicken Satay Skewers and not the often misinterpreted peanut sauce.

Ingredients

For the Chicken Satay Skewers

  • 2 large chicken breasts, cut into long strips
  • Bamboo skewers

For the Peanut Sauce:

  • 3 tablespoons crunchy peanut butter
  • 1 garlic clove
  • 1cm piece of ginger
  • 1 red chilli
  • 1 lime
  • 1 tablespoon soy sauce
  • White pepper
  • Heaped tablespoon of honey
  • Handful of coriander
Method:
  1. First make the peanut sauce. Place all ingredients (the zest and juice of the lime too) in a food processor plus about 50ml of water. Whizz to a sauce consistency. Taste and adjust for your liking- add more honey for sweetness, or soy for saltiness. Put to one side.
  2. Use half the sauce to marinate the chicken strips for at least half and hour and up to 24 hours.
  3. Heat the grill to medium. Thread the chicken strips on the bamboo skewers in an ‘S’ shape.
  4. Place the Chicken Satay Skewers close to the grill as possible. grill for 10 minutes, turning half way through.
  5. Serve the Chicken Satay Skewers with the Peanut Sauce on the side. Serve with Fried Soft Noodles (link to recipe in description), chopped spring onions, chillies and peppers.

Tips

  • Can also be made on the BBQ!
  • Use pork shoulder, lamb shoulder or tofu instead of chicken
