Spaghetti with Garlic, Anchovies and Oregano

 

Spaghetti with Garlic, Anchovies and Oregano – one of the simplest pasta recipes, this pasta dish will be ready in just 10 minutes. The simplicity of the dish calls for the best quality ingredients. I used amazing homemade Italian pasta that was kindly gifted to me from Pasta Abz. They are a local restaurant in Aberdeen currently doing deliveries of fresh pasta, homemade sauces, Italian desserts and also homemade pasta dough for online classes.

Recipe
Serves 2
Difficulty Level: Rookie

Ingredients:
  • 200g good quality spaghetti
  • 4 anchovies in oil, finely chopped
  • 3 garlic cloves, finely sliced
  • Teaspoon (or more) chilli flakes
  • 150ml white wine (optional)
  • Large bunch of fresh oregano (about 10g) finely chopped
  • Large bunch of fresh parsley (about 10g) finely chopped
  • Salt and pepper
  • Olive oil
Method
  1. Cook the pasta in boiling water, according to packet instructions
  2. Add about 50ml olive oil to a large frying pan over a low heat.
  3. Add the anchovies and garlic and cook for about 5 minutes over a low heat, until the anchovies are completely broken down and the garlic is soft.
  4. Add the chilli flakes and increase the heat to medium.
  5. Pour in the white wine and simmer until reduced by half
  6. When the pasta is cooked, use tongs to transfer it to the pan of garlic, anchovy and chilli oil. Add all the herbs and a pinch of salt and good grind of black pepper.
  7. Pour in about 2 tablespoons of the pasta cooking water along with another couple of tablespoons of olive oil to the pasta pan. Toss all together and serve right away.
