Maple Roast Carrots and Parsnips

 

A simple sweet and sticky way to cook your carrots and parsnips this Christmas….

Ingredients:

  • 1 carrot and 1 parsnip per person
  • 100ml of maple syrup
  • Olive oil
  • Salt and pepper

Method:

  1. Cut larger carrots and parsnips in half. Cut halved parsnips into quarters, if needed to keep them all the same size.
  2. Fill a pan with salted boiling water and boil the carrots and parsnips for 3 minutes.
  3. Steam dry until cool. At this point you can freeze and cook on the day.
  4. Preheat the oven to 200C and heat a large roasting tin (large enough to fit all the carrots and parsnips in a single layer) for 5 minutes.
  5. Place the carrots and parsnips in the tin and drizzle with olive oil and season with salt and pepper.
  6. Roast for 20 minutes. Drizzle over the maple syrup and cook for a further 10 minutes.
  7. Enjoy!
