Best Ever Cheese on Toast

 

This is a nostalgic recipe for me and one of the first things I used to cook on my own, from about the age of 8 – and I still cook it now! I have a really strange mind when it comes to food memories and can remember things I ate from years gone by. Long after any of my family even remember the event I can remember exactly what everyone ate (sad- I know) with this recipe, I can remember it taking me an age to make at the age of 8, but I went through a phase of making it every Thursday in time for watching Bad Girls around 1999…..told you I have a strange memory for food. I use to make variations over the years for family members who didn’t like tomato ketchup. I replaced the ketchup with HP sauce or chilli sauce because I was so eager to please them with my cooking!

I have always remembered the recipe and not used the book, but thought I’d dig it out it to take a photo for this post. It has been a little worn over the years and now does not have a front cover. It also turns out there is chutney in the recipe which I have never used when making it, try it if you like, but I don’t think it’s needed. Also, I have always toasted the bread in a toaster first (on both sides rather than just on one side as stated in the book). I find toasting it on one side makes it a bit soggy. I think whole grain bread or sourdough works best and also make sure you spread the topping right to the edges. It makes a great lunch or late night snack as I used to have it – eat it whilst watching Bad Girls for authenticity.
