Sriracha Honey Salmon Noodles

A simple salmon recipe using honey and spicy Sriracha, served with noodles and stir fried vegetables. A sweet, spicy and healthy dinner.

Ingredients
  

  • 2 Salmon Fillets
  • 2 Garlic cloves crushed
  • 4 tbsp Sriracha
  • 1 Lime Juiced
  • 3 tbsp Honey
  • 2 Nests of Egg Noodles
  • Variety of vegetables for stir frying I used peppers, mangetout and baby sweetcorn
  • 1 tbsp Sesame oil
  • 1 tbsp Soy Sauce
  • Sesame seeds Optional

Instructions
 

  • Mix together the sriracha, garlic, honey and lime. Brush the salmon fillets with the sauce and, if you have time, marinate for 30 minutes
  • Heat the grill to high. Put the salmon fillets under the grill, skin side up, for 10-15 minutes. Salmon is best when cooked 'medium'.
  • Meanwhile, boil the egg noodles according to packet instructions. Drain and toss with the sesame oil and soy sauce.
  • Heat a large frying pan over a very high heat. Stir fry the vegetables in a drizzle of oil for just a few minutes, until starting to soften but still crunchy. Mix with the noodles.
  • Add the stir fried vegetable noodles to a plate, top with the cooked sriracha honey salmon and sprinkle over some sesame seeds. Enjoy!
