Sausage, Fennel and Potato Traybake

An easy midweek dinner using sausages. Sausages are roasted alongside fennel and sliced new potatoes for this comforting dish.

Ingredients
  

  • 6 Sausages
  • 1 tbsp Olive oil
  • 8 New Potatoes Sliced thinly
  • 1 Fennel Bulb Thickly sliced into rounds
  • 1 tbsp Fennel seeds
  • 1 tbsp Chilli flakes optional
  • 100 ml White wine

Instructions
 

  • Pre heat the oven to 200C. Place the sausages in a large roasting tin and drizzle over the olive oil.
  • Once the oven is hot, add the roasting tin with the sausages and heat for 5 minutes.
  • Meanwhile, prep the new potatoes and fennel. When the sausages have had 5 minutes, add the sliced potatoes, sliced fennel, fennel seeds and chilli flakes (if using). Season with a little salt and black pepper. Give everything a good toss and then pour in the white wine. Place back in the oven for around 20 minutes until everything is golden brown.
  • Serve the Sausage, Fennel and Potato Traybake with crusty bread, or just on its own.
