Christmas Dinner Pie . This Christmas Pie recipe contains layers of turkey; sage and onion sausage stuffing; cranberry sauce; pigs in blankets; skirlie and Brussel sprouts and these layers are encased in a homemade shortcrust pastry pie. The pie is topped with a puff pastry lid. You could make this as an alternative Christmas Dinner but it is even better made on Boxing Day with all the leftovers from Christmas Day. It is the best Christmas leftovers recipe. Make the pie yours by using whatever leftovers you may have and make it easier by using shop-bought shortcrust pastry. Served hot or cold, with or without gravy, this is my recipe for a delicious Christmas Dinner Pie.

Bannerman Butcher

The guys over at Bannerman Butcher challenged me to create this pie and they kindly gifted the turkey, pigs in blankets, sausage meat and skirlie – all of which were delicious!

I have been working with Bannerman Butcher this year and have created lots of recipes using their amazing Scottish produce. It has been great trying all their products and completing challenges set by Chris. I’ve loved thinking up unique recipes. I am especially a fan of their charcuterie- their coppa , pastrami and chipotle beef are all made in house and are delicious!

Christmas Dinner Pie


RECIPE

SERVES around 8
Difficulty Level home cook

Ingredients:

For the shortcrust pastry: (or just use shop bought)

  • 220g plain flour
  • Teaspoon salt
  • 100g butter, cubed
  • Cold water

For the pie:

  • Cooked turkey breast (see my Turkey recipe)
  • Pigs  in blankets
  • Skirlie 
  • Sausage meat with sage and onion

All of the above can be bought from Bannerman Butcher

  • Leftover raw Brussel sprouts, shredded (use a food processor or grater) Try my Shredded Garlic Sprouts recipe!
  • 200ml leftover gravy
  • 1 packet of ready made, all butter puff pastry
  • 1 egg, beaten
  • Olive oil

You will also need:

  • Loaf tin
  • Greaseproof paper
Method:

1. First make the shortcrust pastry. Add the flour, salt and butter to a food processor and pulse until combined and breadcrumb-like. Drizzle in a tablespoon of water at a time, keeping the motor running until the pastry comes together in a ball. Remove from the food processor, wrap the ball of pastry in cling film and chill for 30 mins (this is a very important step- the pastry will not hold if you don’t chill it) Alternatively, use shop bought pastry!

2. Preheat the oven to 210C. Line your loaf tin with greaseproof paper, making sure to overlap it. This is how you will get the pie out the tin so it is essential.

2. After your pastry has rested in the fridge, take it out and roll into a rectangle big enough to encase and slightly overlap your tin. The pastry should be the thickness of around a one pound coin.

3. Carefully place the pastry into the tin, leaving an overlap of around 2 inches.

4. Begin layering the pie. Try and make all the layers the same depth. Make sure all the fillings are cold. I started with a layer of turkey breast, then sausage meat, Brussel sprouts, pigs in blankets, cranberry sauce and finally skirlie. Finally pour the gravy on top and let it sink through the layers.

5. Roll out the puff pastry to fit the top of the pie. Press on to the top of the pie, trim the excess and crimp the puff pastry edges to the shortcrust edges.

6. Brush the pie top with the beaten egg and cut a cross on top to let steam out.

7. Bake the pie in the oven for 35-45 minutes, until the puff pastry is golden and puffed up. If it gets too brown during cooking, cover with foil.

8. Allow the pie to sit for 10 minutes before cutting into slices and enjoying hot or cold, with or without gravy.

Tips

  • If you are making this pie as the main event, you will still need to cook and cook the layers first and cool before putting in the pie – I haven’t tried it with raw fillings. It may work and if you try it be sure to let me know!
  • Keep an eye out on the Christmas section of my blog and my Instagram for recipes for all of the fillings.
  • Make miniature pies in muffin tins- perfect for party food.
  • Put any fillings you like in. Layers of red cabbage, sliced potatoes, carrots or parsnips would all work.
