Halloumi in Blankets with Cranberry Dip. Christmas is coming and these are a perfect addition to Christmas as a side, starter or as part of a party spread. Obviously inspired by the ever-popular pigs in blankets, my Halloumi in Blankets might be even better. They aren’t just for Christmas either. They would be perfect as a pre-dinner nibble or as a BBQ side- they could even be made on the BBQ. Strips of Halloumi are wrapped in Parma ham and baked until crisp on the outside and gooey in the middle. Served with a tangy cranberry dip which cuts through the salty halloumi and ham. Extremely simple to make and so so tasty, I hope you will make these this December- be sure to share with me your creations on Instagram. They are best served straight from the oven so the cheese stays gooey. You can prep these ahead a day in advance and then make them the last thing you cook in the oven before serving up Christmas dinner. You could also wrap the Halloumi batons in bacon if you don’t have Parma ham.

Halloumi In Blankets


Recipe
Makes around 10
Difficulty Level Rookie

Ingredients:

For the Halloumi in Blankets

  • 1 pack of halloumi
  • 1 pack Parma ham, or use bacon 
  • Olive oil

For the Cranberry Dip

  • 100g frozen cranberries
  • 1 Apple, grated
  • 200ml water
  • 3 heaped tablespoons sugar
Method:
  1. First make the Cranberry Dip. Pour the water into a saucepan over a medium heat. Add the sugar and warm gently to dissolve the sugar. Turn the heat up, add the Apple and cranberries and simmer for 5-10 minutes to the consistency you want.

2. Preheat your oven to 220C. Cut the halloumi into thick, sausage shape batons. Aim for around 10 sticks per pack of halloumi. Wrap a slice of Parma ham around each stick of halloumi. Drizzle a baking tray with olive oil (otherwise they may stick) arrange the Halloumi in Blankets on the tray and drizzle with a little more oil. Bake in the oven for around 20 minutes until the ham is crisp and golden and the halloumi is oozing.

3. Serve these Halloumi in Blankets alongside your Christmas Dinner or as a starter with the Cranberry Dip.
