Nduja Chicken with Mozzarella

 

Nduja Chicken with Mozzarella, served with my Crispiest Ever Oven Chips. I love creating recipes with new ingredients. I first tried Nduja at Mozza, a great pizza chain restaurant. I am lucky enough to have a Gold card for the restaurant, treating me to monthly Mozza pizza!

If you haven’t tried Nduja, it can best be described as a spreadable, hot salami. Nduja is similar in flavour to hot chorizo, but unlike it’s Spanish cousin, Italian Nduja is soft and pliable, perfect for stuffing, sauces and as a topping for meat as I have used here in my Nduja Chicken recipe.

I got Nduja from the Nduja Connoisseur. Message on Instagram for delivery. The Nduja Connoisseur is based in London, but sources Nduja from her hometown in Spilinga Calabria, the home of Nduja.

Recipe
Serves 2
Difficulty Level Home Cook

Ingredients:
  • 2 chicken breasts
  • 1 egg, beaten
  • Plain flour
  • Breadcrumbs (See tip, below)
  • 70g Nduja (see above for where I got mine)
  • 150g mozzarella
  • Sunflower oil
  • Salt and pepper
Method:
  1. Preheat the oven to 220C. Place the chicken breasts between two sheets of cling film. Bash with a rolling pin until they are around evenly sized, around 1.5 inches thick. Season the chicken breasts with salt and pepper.
  2. Put the beaten egg in one plate, a couple tablespoons of flour seasoned with salt and pepper in another and the breadcrumbs in another.
  3. Coat the chicken in the flour, then the egg and finally the breadcrumbs. Dip the chicken back in the egg and in the breadcrumbs again for a thick coating.
  4. Place around an inch of sunflower oil in a frying pan large enough to hold both chicken breasts. Heat the oil over a medium high heat. When hot, carefully place the chicken breasts into the oil and cook for around 4 minutes on each side until brown and crisp.
  5. Remove the crispy chicken and place on kitchen paper to get rid of any excess oil.
  6. Spread the nduja on the chicken breasts. Top with slices of mozzarella and bake in the oven for 10 minutes until the nduja is cooked and the mozzarella topping is bubbling.
  7. Serve the Nduja Chicken with my Crispiest Ever Oven Chips.

TIPS

  • Don’t buy breadcrumbs. Whiz stale bread in a food processor to crumbs. Store in a tub in the freezer and you will always have breadcrumbs to use. Can also be used for my Haddock Fish Cakes with Yuzu Mayo.
