Goats Cheese and Roasted Vegetable Tortilla Pizza

 

A healthy alternative to a normal pizza with a lot less calories. I’ve only used goats cheese here and if you use a low fat version then you’ll reduce the calories even more. Topped with loads of vegetables makes this super healthy with around 3 of your 5 a day. There are plenty of topping variations, but this is by far my favourites. You will probably have leftover vegetables if making for one, these are great for a salad the next day for lunch.

RECIPE

SERVES 1

Difficulty Level: Rookie

Ingredients:

  • 1 tortilla wrap
  • 100g goats cheese
  • 2 tablespoons tomato purée
  • 1 garlic clove, crushed
  • 1 red onion, thickly sliced
  • 1 Pepper, thickly sliced
  • 1 small aubergine, cut into chunks
  • 1 courgette, thickly sliced
  • Handful baby tomatoes, sliced in half
  • 4 artichoke hearts from a jar
  • Handful olives, sliced
  • Olive oil
  • Salt and pepper

Method

  1. Heat the oven to 180C. Toss the cut up onion, courgette, aubergine and Pepper with a drizzle of olive oil and a good grinding of salt and pepper. Place in a large roasting dish and cook for around 20 minutes or until soft.
  2. Meanwhile, mix the crushed garlic with the tomato purée and spread on top of the tortilla.
  3. When the vegetables are cooked, load them on top of the tortilla base and crumble over the goats cheese. Bake in the oven on a tray for around 10 minutes until the tortilla is crisp and the goats cheese is beginning to melt.
  4. Remove from the oven and top with the artichokes, tomatoes and olives! Serve.

Tips

  • Use mozzarella, fontina or Gorgonzola instead of goats cheese
  • If you want to make more than one, simply double the ingredients
  • Top with rocket leaves for more flavour
  • Make a salad with the leftovers: rocket, cold roasted vegetables, goats cheese, tomatoes, olives and artichokes would make a great salad!
