Mama’s Cheese Bake

 

Mama’s Cheese Bake recipe – This is a replica of an amazing Frankie & Benny’s dish which was named Mama’s Cheese Bake!. As a teenager, my friend Julia and I would go pretty much every weekend to Aberdeen Frankie and Benny’s specifically for this only dish. We would order one each even though it was meant to be a ‘sharing starter’ and devour every bit. I remember we went once and they had taken it off the menu…which obviously traumatised us. As a result I tried to make my own and it turned out to be pretty easy – it’s simply a tomato and melted cheese dip served with crusty bread to dunk in- really easy but so satisfying! RECIPE
SERVES 2 (1 if you’re being greedy…)
DIFFICULTY LEVEL: Rookie

Ingredients:
  • 1 tin chopped tomatoes
  • 2 cloves garlic, crushed
  • 1 teaspoon sugar
  • 75g grated mozzarella
  • 50g grated Parmesan
  • 100g ricotta
  • Olive oil
  • Salt and pepper
  • Fresh baguette, to serve
Method:
  1. Preheat the oven to 200C. Pour 3 tablespoons olive oil in a saucepan over a high heat. Add the garlic and stir, cooking for about 1 minute. Add the chopped tomatoes and the sugar. Turn the heat down and simmer for 10 minutes until thickened. Season with lots of salt and pepper.
  2. Place the tomato sauce into a small dish and mix together the ricotta, the parmesan and most of the mozzarella. Top the tomato sauce with the cheese mix and the leftover mozzarella. Grind over some more salt and pepper. Bake in the oven for around 15 minutes until bubbling and melted. Serve with baguette to dunk!

TIPS

  • Drizzle over a little truffle oil before serving for more indulgence- I love Truffle Hunter oils!

  3. Hi the original recipe also has goats cheese in it, I did one get the proper recipe from someone who was leaving and lost it, yours is very similar from memory just missing goats cheese.
