Gin Pasta

 

Gin Pasta – A take on the classic pasta ala vodka, but with my tipple of choice, gin! A very simple recipe but comforting and flavoursome none the less. Let me know if you give it a go!

Ingredients

  • 100g Pasta (penne or fusilli work best)
  • 1 shallot, finely chopped
  • 1 clove of garlic, finely chopped
  • 5 tablespoons of tomato purée
  • 150ml passata
  • 200ml gin
  • 100ml double cream
  • 50g Parmesan, grated
  • Salt and pepper
  • Olive oil

METHOD

  1. Put a large frying pan over a medium heat. Pour in a couple tablespoons of olive oil and sauté the shallot and garlic for 10 minutes until really soft but not coloured.
  2. Add the tomato purée and cook, stirring for a couple of minutes.
  3. Add most of the gin, leaving a couple of tablespoons, and the pasatta. Increase the heat to medium high and allow to bubble for around 10 minutes.
  4. Meanwhile, cook the pasta according to the packet instructions. Make sure to add to boiling water and don’t overcook.
  5. After about 10 minutes, add the double cream and remaining gin to the sauce and stir to combine.
  6. Season with salt and pepper and add most of the grated parmesan, leaving some for serving.
  7. Place into bowls and serve topped with Parmesan!
