Boxing Day Pie

 

A throw together pie with all the yummy leftovers from the day before. Very easily adjusted to what you have leftover from Christmas Day. Even make it a veggie pie by simply adding all the leftover vegetables into a veggie gravy and topping with the pastry top. Servings will depend on how much you have leftover

RECIPE

Heat the oven to 200C.

Shred all the turkey leftovers and add to a pan with the leftover gravy. If there isn’t enough gravy, then make some more: in a pan, melt 25g butter and 25g flour and stir together to cook for a couple of minutes. Add 200ml of chicken stock and allow to bubble and thicken for 10 minutes.

Add in leftover sprouts, about 100ml double cream and chunks of Brie. Stir together and transfer into an ovenproof pie dish. Top with the puff pastry sheet (or use filo), drizzle with oil and bake for around 30 minutes until golden and crisp.
