Chilli Cheese Fries

 

Inspired by the Chilli Cheese Fries at one of my favourite Aberdeen restaurants, Boozy Cow, I attempted to create my own version. I was pretty impressed with my efforts but they will not stop me going to visit Boozy Cow for their amazing food! The chilli is not like a traditional con carne, but less saucy and quicker. This way, the fries underneath stay crisp. Let me know if you give it a go!

RECIPE

SERVES 2

Ingredients:

  • Enough frozen fries to fill two dishes
  • 200g beef mince
  • Teaspoon each of cumin, coriander, chilli power, cayenne pepper
  • Teaspoon (or more) of Tabasco
  • Tablespoon Worcestershire sauce
  • Tablespoon tomato puree
  • 80g Mature cheddar Cheese
  • 1 red chilli, finely chopped
  • 1/4 jar jalapeños, finely chopped
  • 1/4 white onion, finely chopped
  • American mustard
  • Salt and pepper

METHOD

1. Preheat the oven to 200C

2. In a frying pan, heat a splash of oil and fry the beef mince, stirring to break it apart. Add all the spices, the tomato puree, the Worcestershire sauce, Tabasco and a splash of water. Season generously with salt and pepper and cook for around 20 minutes. Meanwhile, cook the fries in the oven.

3. When the fries are cooked, put into two smaller dishes and top with the half the cheese, the chilli beef and some more cheese. Put back in the oven until melted.

4. Top the loaded fries with both the chopped Chillies and onion and squeeze over the mustard.

TIPS

Would also work well as a nacho topping
