Spicy Salmon Burgers with Wedges, Raita and Broccoli. Salmon burgers are so easy to make and is a  welcome change from serving a fillet of salmon. You can really get flavours into the Salmon Burgers and in this recipe, I have opted for Indian style spicing. I have served my Spicy Salmon Burgers with spiced wedges, broccoli and a zingy cucumber and mint raita. This healthy dish is quick enough to be a new weekday staple. RECIPE – SPICY SALMON BURGERS
SERVES 2

Ingredients
  • 2 skinless salmon fillets
  • 1 teaspoon of cumin seeds, garam masala and fennel seeds
  • Spices for burger: 1/2 teaspoon of coriander seeds, black pepper, asafoetida, chilli powder, salt and turmeric
  • 5 cloves of garlic, crushed
  • 10g finger sized piece of ginger
  • 1 teaspoon of tomato purée
  • 1 chilli (your preference to colour and heat)
  • 75g plain yoghurt
  • Handful of mint, finely chopped
  • 1/4 cucumber, peeled, seeds removed and finely chopped
  • 2 large potatoes, cut into chips
  • Spices for wedges: teaspoon each of turmeric, fennel seeds, cayenne pepper and curry powder
  • Purple sprouting broccoli
  • Sunflower oil
Method:
  1. Heat the oven to 200C. Mix the wedge spices with 1 crushed garlic clove and a tablespoon of sunflower oil. Toss with the wedges and put on a baking tray. Bake in oven for 20-30 minutes.
  2. Toast the coriander, cumin and fennel seeds in a pan. In a pestle and mortar, bash all the spices for the salmon, 3 garlic cloves, the chilli, the ginger and the tomato purée to a paste. Season with salt.
  3. Put the paste and the salmon fillet into a food processor. Blitz briefly until it is a rough paste. Shape into a burger, place on oiled tin foil and put on to a baking tray. Bake for 10 minutes. Alternatively, you can pan fry the salmon burgers for four minutes on each side which gives more colour to the Salmon Burgers. 
  4. Meanwhile, make the raita. Mix the chopped mint, cucumber and remaining garlic with the yoghurt and season with salt.
  5. Steam the broccoli for 6 minutes.
  6. Serve the Spicy Salmon Burgers on top of the broccoli. Top each burger with some raita and serve the wedges on the side.
