Greek Souvlaki Chicken Wraps

 

Greek Souvlaki Chicken Wraps – A staple street food in Greece, Souvlaki Chicken (and other meat) is used to fill gyros pittas, a delicious bread filled with meat such as chicken, pork or lamb; salad vegetables; tzatziki and chips. Chips in a pitta? Sounds weird but works so, so well. I’ve changed it up a bit here by using a wrap and toasting it for a burrito style Gyros, but if you’d prefer a traditional Gyros, find my recipe here . The chips are optional and it would be just as tasty (and a little healthier) without them! I’ve also used Terpsi Goods souvlaki mix for gyros which was the perfect blend and allowed for an authentic Greek flavour! Find it here. RECIPE

Makes 2/3 Wraps

Ingredients:

For the chicken:

For the Wraps:

  • 2 Tortilla Wraps
  • 1 red Pepper, diced
  • 1/2 onion (red or white) finely sliced
  • 1/4 cucumber, diced
  • Handful shredded lettuce
  • Oven chips

For the Tzatziki:

  • 1/4 cucumber
  • 2 garlic cloves
  • 150g Greek yoghurt
  • Salt
Method:
  1. For the chicken, mix together the yoghurt, spice mix, olive oil and a little salt and pepper. Spread over the chicken and allow to marinate for as long or as little time as you have.
  2. Put the grill on a high heat. Grill the chicken for around 6 minutes on each side until beginning to blacken (this crispy crust is the best part!)
  3. Meanwhile, prepare the salad vegetables and cook the oven chips.
  4. Make the Tzatziki. Cut the cucumber in half lengthways and scoop out the seeds with a spoon, discard. Put the yogurt into a bowl and grate in the cucumber and the garlic cloves. Add a little salt and stir well.
  5. When the chicken is cooked through, thinly slice or shred with two forks.
  6. Heat a frying pan on a high heat.
  7. Make your wrap: spoon a thick layer of Tzatziki in the centre of the wrap. Top with chicken, onion, lettuce, peppers and cucumber. Add a few oven chips.
  8. Fold the edge of the wrap over the filling and tuck under. Fold in both sides of the wrap and then tightly roll into a burrito shape.
  9. Place in a dry pan for a minute each side to crisp up slightly. Cut in half and serve your Greek Chicken Souvlaki Wraps!

Tips

  • Make it veggie: Use halloumi instead of chicken. Cut the halloumi into 1 inch slices, toss in olive oil and the spice mix, then grill or fry for a couple of minutes each side until golden.
  • Use hummus instead of Tzatziki
  • Add some hot chilli sauce for some spice
  • Use a flatbread or pitta instead of a wrap
